French Toast – 2 Ways

I love home-made french toast for brunch on the weekends, usually topped with ricotta and berries, but my boyfriend is more of a savoury guy – think fried mushrooms on toast, bacon hash, poached eggs and hollandaise. So this weekend I had to find a way to please us both!

These recipes are super filling so you may be able to share one serve or do what my boyfriend does and save half for a late lunch.

Savoury French Toast

Egg mixture:

  • 2 eggs
  • 2 Tbsp milk
  • 1/4 tsp garlic powder and onion powder
  • 1/8 tsp paprika, salt and pepper

1. Whisk everything together!

Other ingredients:

  • 2 pieces of your favourite bread (we used multigrain sourdough)
  • 1/2 avocado
  • 1 chorizo
  • Squeeze of lime or lemon juice
  • Handful cherry tomatoes and rocket
  • Fresh coriander or parsley
  • Sour cream to top

1. Cut the chorizo in half lengthways and fry in a hot pan for a few minutes each side or until brown and crispy.

2. Soak your bread in the egg mixture for a minute each side then into the fry pan, cooking in the chorizo oil left behind. When the underside is browned flip and cook the other side until browned. (If you have leftover egg mixture pour it on top!)

3. Mash the avocado with the lemon or lime juice and a pinch of salt and pepper. Cut the tomatoes in half and chop the herbs.

4. To assemble, top the French Toast with the mashed avo then rocket. Top with the chorizo, tomatoes and fresh herbs. Serve with a dollop of sour cream.

Sweet French Toast

Egg mixture:

  • 2 eggs
  • 2 Tbsp milk
  • 1/4 tsp ground cinnamon and vanilla essence

1. Whisk everything together!

Other ingredients:

  • 2 pieces of your favourite bread (we used light rye)
  • 1/2 cup Greek yoghurt
  • 1 Tbsp tahini
  • 1 tsp honey
  • Handful of mixed berries (we used raspberries and blackberries)
  • Handful of chopped nuts and seeds (we used pecans, pumpkin seeds, almonds and pistachios)
  • Fresh mint

1. Soak your bread in the egg mixture for a minute each side then into a hot fry pan. When the underside is browned flip and cook the other side until browned.

2. Mix the Greek yoghurt with the tahini and honey (add more honey if it’s not to taste). Cut the berries in half or quarters depending on size.

3. To assemble, top the French toast with the tahini yoghurt. Sprinkle over berries and nut/seed mix. Garnish with fresh mint and another sprinkle of cinnamon.
