I love quick & easy desserts that taste delicious too. These little sticky date mug cakes have all the sweet, caramelly flavours you know from traditional sticky date without the high calories and sugar! Perfect for a cold winter night in.

You have the option to dice the dates finely or blend them after soaking, I definitely prefer the blended version but it’s completely up to you. Just make sure you don’t use too much water when soaking them or the cake will come out denser and chewy.
I love the texture and flavour of Whole Earth sugar replacements so I will always recommend this brand, however if you have a favourite sugar replacement, specifically brown sugar, then feel free to use that instead.

Makes: 1 mug cake
Time: 12 minutes
- 4 dried dates
- Approx. 2-3 Tbsp boiling water
- Pinch of baking powder
- 2 Tbsp wholemeal self-raising flour
- 1/2 Tbsp Whole Earth brown sugar + 1/2 Tbsp separated
- 1 tsp vegetable oil
- 2 Tbsp milk of choice
- Finely dice the dates and place in a microwave safe mug.
- Sprinkle over baking soda and pour in boiling water to just cover the dates – around 3 Tbsp at most. Let sit for 10 minutes, until soft.
- Optionally, blend the dates at this point for a smoother texture.
- Add in all other ingredients and stir to combine.
- Sprinkle the separate 1/2 Tbsp Whole Earth brown sugar on top of the mixture. Using the back of a spoon gently pour over an additional 1-2 Tbsp boiling water to dissolve the sugar.
- Microwave for 1:20 minutes.
- Enjoy on it’s own or with a little light cream or ice cream!
