Strawberry Bruschetta

Trust me on this one! I know it sounds like a weird combo but it truly does work! The slight acidity of the tomatoes balances the sweetness of the strawberries, and the salty, creaminess of the fetta brings it all together. This is starting to sound like tasting feedback but really, just believe in the process 😉

Serves: 1
Time: 5 minutes


  • 2 slices of your favourite bread – we tend to go sourdough
  • 1 cup cherry tomatoes diced
  • 1/2 cup strawberries diced
  • 2 Tbsp red onion diced
  • 2 Tbsp basil leaves
  • 1 Tbsp balsamic vinegar
  • 1 tsp olive oil
  • 30g feta
  • pinch salt and pepper
  1. Toast your bread.
  2. Whilst that’s toasting mix together the tomatoes, strawberries, onion, basil, balsamic vinegar and oil.
  3. Top your toast with the tomato mixture, feta and season with salt and pepper.
